SWEET POTATO TACOS RECIPE


These Sweet Potato Tacos are gluten free, vegan, wholesome, and oh yeah, certainly DE-LICIOUS! Packed with spices, mushrooms, black beans, and potatoes -- those tacos will satisfy!

Ingredients

  1. 2 pounds sweet potatoes cubed into 1/2 in balls
  2. 1 (8 ounces ) package sliced mushrooms
  3. 2 tbsp olive oil
  4. 2 tsp Paprika
  5. 2 tsp cumin
  6. 2 tsp chili powder
  7. 2 tsp onion powder
  8. 2 tsp garlic powder
  9. 2 tsp salt to taste
  10. 1 tsp pepper
  11. 1 (16 ounce ) can black beans
  12. Grilled Corn and Avocado Salsa for serving (see article above for additional serving hints )

Directions

  1. 
Put everything (MINUS BEANS) onto baking sheet.
  2. Toss to combine.
  3. Bake in preheated oven for 20-30 minutes, or till potatoes are tender, stirring every 10 minutes or so.
  4. Remove from oven and stir into dark beans.
  5. Taste and re-season, if needed.
  6. Serve with tortillas, cheese, cheese, etc!
