SWEET POTATO TACOS RECIPE

Ingredients
- 2 pounds sweet potatoes cubed into 1/2 in balls
- 1 (8 ounces ) package sliced mushrooms
- 2 tbsp olive oil
- 2 tsp Paprika
- 2 tsp cumin
- 2 tsp chili powder
- 2 tsp onion powder
- 2 tsp garlic powder
- 2 tsp salt to taste
- 1 tsp pepper
- 1 (16 ounce ) can black beans
- Grilled Corn and Avocado Salsa for serving (see article above for additional serving hints )
Directions
- Put everything (MINUS BEANS) onto baking sheet.
- Toss to combine.
- Bake in preheated oven for 20-30 minutes, or till potatoes are tender, stirring every 10 minutes or so.
- Remove from oven and stir into dark beans.
- Taste and re-season, if needed.
- Serve with tortillas, cheese, cheese, etc!
