INGREDIENTS

  1. 1 pound sweet potatoes, peeled and cut into 1/2″ cubes
  2. 4 tsp garlic, minced
  3. 1 pounds ground breakfast sausage
  4. 2 cups spinach leaveschopped
  5. 1/2 cup non-dairy milk from your choice (vanilla, coconut, etc.. )
  6. kosher salt and freshly ground black pepper

INSTRUCTIONS

  1. Preheat oven to 400F with stand on lower centre position. Lightly grease a 9×13 baking dish and set aside.
  2. On a large baking sheet, combine sweet potatoes using 2 TB olive oil, 1/2 tsp kosher salt, and also 1/4 teaspoon freshly ground black peppertoss to coat well. Bake till tender in a single coating for 20 minutes.
  3. Meanwhile, heat remaining 2 TB olive oil onto a large skillet over medium heat. Add garlic and onions and stir fry 2-3 minutes or until translucent. Add peppers and stir fry 1 minute. Transfer mixture to 9×13 baking dish.
  4. At precisely the exact same skillet over medium high heat, cook and then split apart sausage together with spatula until cooked through. Drain and add mixture to baking dish. Add potatoes, 1 teaspoon kosher salt chopped spinach, and also 1/4 teaspoon freshly ground black pepper into the mix. Toss to blend all ingredients.
  5. In a bowl, lightly whisk together the eggs and 1/2 cup of non-dairy milk till well blended. Pour equally over the mix in dish. Bake uncovered about 25-30 minutes or until eggs are set in centre.
