Sweet Potato Fajitas Meal Prep

For the record, I am right there with you -- I believe sweet potatoes for their particular food collection. In addition, I believe potatoes are perfect for meal prep since they remain fresh-tasting in the refrigerator if you eat them cold, and they do not taste odd.

This sweet potato fajitas meal prep recipe could not be simpler! Cook the veggies that are experienced pan and serve with guacamole and rice to get a balanced, filling meal.

Ingredients

  1. 1 tsp sea salt
  2. 1 tsp paprika
  3. 1/2 tsp black pepper
  4. 1/2 tsp chipotle powder
  5. 1/4 tsp nutmeg
  6. 1/8 tsp cayenne
  7. 1/8 tsp garlic powder
  8. 2 cups cooked brown rice (or quinoa! ) )

Directions

  1. Preheat oven to 375º and line two baking sheets with parchment paper.
  2. In a small bowl, mix salt, paprika, pepper, chipotle, cumin, cayenne, and garlic powder. Stir together.
  3. Spread sweet potatoes on sheet pan and garnish with 2 Tablespoons of oil. Sprinkle half the seasoning above these and mix up them to coat.
  4. On the next sheet pan, then spread bell peppers and onion. Drizzle with oil and sprinkle the other half the seasoning. Mix to coat.
  5. Put the sweet potatoes to the oven and bake for 10 minutes. Set the bell pepper onion sheet pan to the oven and continue baking for half an hour. Eliminate in the halfway mark fry for baking to stir fry.
  6. While the veggies are baking, you've only enough time to create your brown rice or quinoa or alternative grain of selection! (We cooked brown rice at our Immediate Pot.)
