Sweet potato and zucchini healthy strata bake


So strata bakes, they generally utilize layers of bread and other things to fill the tray up, but with this particular sweet potato and zucchini healthful strata bake...I have ditched bread!




It All has been substituted with zucchini and thinly sliced potato and as a bonus, there are corn and legumes in the marketplace! That is a large step towards the 5! And it is created for breakfast period.

Sweet potato and strata that are healthful bake

Fantastic for great and breakfast from this potato, the lunchbox and zucchini strata bake is jam. Freezer and kid friendly. Good way to begin the day with veggies!

PREP TIME : 15 minutes

COOK TIME : 25 minutes

TOTAL TIME : 40 minutes

Ingredients

  1. 500 g sweet potato, peeled and sliced
  2. 1 zucchini
  3. 8 eggs
  4. 1/2 cup cream
  5. 1 teaspoon fresh coriander

Directions

  1. Preheat oven to 180 / 355F levels.
  2. Thinly slice the potato. Boil or bake till tender - you need it -!
  3. At the bottom of a 20cm square cake tin, then put a coating of this potato followed corn and by 1/4 cup frozen peas.
  4. Top with a layer.
  5. Repeat.
  6. Mix 1/2 cup of the cheese in a jug and the eggs with the cream.
  7. Pour on at the tin.
  8. Top with the thyme along with 1/2 cup cheese.
  9. Bake at 180 degrees for 25-30 minutes until set and golden. Cool for 5 minutes before serving.
  10. Pieces can be frozen in by you. And defrost before placing in the lunchbox in the refrigerator.
