Loaded Taco Sweet Potato Sliders {Paleo, Whole30}

These sweet potato sliders are packed with snacks! Taco seasoned burger patties over roasted sweet potato"buns" topped with an simple guacamole, chipotle ranch along with crumbled bacon. Perfect as even a enjoyable meal, party food or an appetizer! Whole30 compliant and paleo accepted!
Ingredients
- 1-2 med/large FAT sweet potatoes scrubbed and chopped into 1/2" thick rounds (you'll want 10 rounds complete )
- Olive or avocado oil also salt for roasting
- 1/8-1/4 tsp chipotle powder longer if you want spice!
- 1 new jalapeño minced
- 2 tsp garlic minced
- 1/2 teaspoon fine grain sea salt
- Two med/large ripe avocados
- 1 brand new jalapeño pepper minced
- 1/4 cup chopped fresh cilantro and more for garnish
- 3 pieces nitrate free sugar free for Whole30, cooked and crumbled
- chipotle ranch
- 1/2 cup Paleo mayo either home made or bought
- 1/2 tsp chipotle powder
- 1 teaspoon fresh lime or lemon juice
- 1 teaspoon onion powder
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1 teaspoon dried chives
- Optional salt to taste
Directions
- Preheat your oven to 425 degrees and line a large baking sheet with parchment paper.

- Brush a small quantity of the oil on either side of each sweet potato around and arrange on baking sheet spread aside. Simmer for 15 minutes in the preheated oven, then reverse each one continue another 10-15 mins or until beginning to brown and tender.

- Put each sweet potato around onto a serving platter and top with a cooked patty. Top crumbled bacon, then drizzle as needed with ranch and each one with guacamole. Drink - like!
