INGREDIENTS
- 2 tsp garlic, minced
- 2 potatoes, cubed and peeled
- 4 cups water or vegetable broth
- Lentils dried
- kosher salt
- 1 can (14 oz ) coconut milk
- 2 cups cooked rice
- For serving Naan

STOVE-TOP
- Heat the oil in a large pot over moderate heat. Add garlic, the ginger, and potatoes and cook about 2 minutes, until aromatic.
- Add lentils and the broth. Season with salt. And then lower the heat. The potatoes and cover and simmer 15-20 minutes, until the lentils are tender tender.
- Stir in the milk and lettuce, cook 5 minutes.
- To serve, divide the rice the soup overtop. Serve across the medial side with Naan. Enjoy!
