Chicken Pesto Stuffed Sweet Potatoes {Paleo, Whole30}


These chicken pesto filled potatoes are filling, yummy and easy to create! Compliant pesto and A paleo is blended with shirts and chicken sweet potatoes. Great to make ahead of the leftovers along with time save!

Because yum that is sacred -- it is very good stuff! And if you are using it as a topping or dip baking with poultry



After experimenting with it a little bit I tweaked the recipe a bit this time around. I added lemon juice and utilized many different greens outside spinach and basil to learn how it turned out.

Ingredients

  1. 1 cup uncooked shelled walnuts
  2. 4-5 cloves garlic
  3. 2 cups fresh spinach kale, or other greens
  4. 2/3 cup olive oil that is mild
  5. 3 cups cooked chicken breast or roughly 1 pounds uncooked
  6. Potatoes
  7. To baking coconut salt and oil

Directions

  1. Coat potatoes that are sweet with a little bit of oil and sprinkle sea salt around.
  2. Make the pesto. Combine lemon juice, garlic, basil leaves, olive oil, walnuts, nutritional yeast, and salt in a blender or food processor. Blend until a paste forms on high speed, scraping sides as necessary.
  3. Combine shredded of the pesto and chicken . Once potatoes are prepared, cut on top and each 1 lengthwise liberally. You go back to oven to heat through or can function as is. Enjoy!
