Sweet Potato Crescent Bites

INGREDIENTS

  1. Cooking spray
  2. 3 medium sweet potatoes (approximately 1 1/4 pounds ) ) , scrubbed clean
  3. 2 tablespoons. heavy cream
  4. 1/2 tsp. ground cinnamon
  5. 1/2 tsp. Pure vanilla extract
  6. 1/2 tsp. kosher salt
  7. refrigerated Crescent rolls
  8. 24 whole pecans
  9. 1 tablespoon.

DIRECTIONS

  1. Preheat oven to 375° and dirt a muffin tin. Pierce potatoes 3 to 4 times with a fork. Put potato on microwave and plate 15 minutes. Continue microwaving in 30 minute increments, if your potatoes are not fork tender after 15 minutes.
  2. Scrape filling into a bowl when tomatoes are cooked through and discard skin. With fork, mash potatoes or a potato masher . Add heavy cream, brown sugar, cinnamon, vanilla, and salt and whisk to blend.
  3. On a floured surface, roll dough out, and pinch seams together. Cut into 24 squares and place.
  4. Spoon a tablespoon of potato mixture into every square top with marshmallows and bake till crescent pastry is golden, about 15 minutes. Insert a snack that is pecan into the middle of each and bake. Brush pecans before serving, When utilizing.
